What can I do with a bunch of limes?
If you have a bunch of limes or key limes to use, these Lime Cookies are the perfect easy cookie recipe! You could also make Lime Bars, Guacamole Salsa, or Southwest 7 Layered Dip!
How to Make Lime Sugar Cookies
For Lime Sugar Cookies you will want at least two limes and the zest of two limes. However, if you don’t have fresh limes you can also use lime concentrate or lime essential oil.
Lime Cookies Recipe
Ingredients:
1/2 cup unsalted butter, softened
1 cup white granulated sugar
1 teaspoon pure vanilla extract
1 egg
1 teaspoon lime juice
1/2 teaspoon lime zest
1 1/2 cups unbleached flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
Glaze:
1.5 cups powdered/confectioners sugar
6 teaspoons Lime juice (extra if needed)
1/2 teaspoon lime zest (plus extra for garnishing – optional)
1/2 teaspoon vanilla
Directions:
Preheat the oven to 350 degrees.
Cream butter and sugar together.
Add vanilla, egg, lime juice, and lime zest.
Slowly stir in flour, baking powder, salt, and baking soda.
Roll into 1” balls and place on baking sheets that have been lined with parchment paper.
Bake for 9-10 minutes or until the edges start to brown.
Once cookies are done, remove from the oven and let cool on baking sheet for 5 minutes before transferring to a cooling rack.
While the cookies cool, combine the powdered sugar, lime juice, lime zest, and vanilla for the glaze (if needed, add a little extra lime juice or water to make more thin, or add more powdered sugar to thicken).
Spoon 1 teaspoon of glaze in the center of each cookie and spread evenly or drizzle glaze over cookies and garnish with lime zest.
Notes:
I used the juice of 2 limes and the zest of 2 limes for this recipe.
Garnishing the cookies with lime zest is optional.
Option to drizzle glaze over cookies instead of flooding the center.

Notes
How to know when cookies are done?
When you are baking these cookies, be sure to watch them closely around 8-9 minutes. You want to catch them before the edges brown, but you will also want to pull them out of the oven and let them finish baking on the pan.
I baked my cookies for 10 minutes.
Can I freeze Lime Sugar Cookies?
Yes!!! Lime sugar cookies can be frozen so easily! Just freeze the dough in small cookie dough balls and pull out 1-2 or however many and bake accordingly!
