No bake cookies are one of the only desserts my husband will actually ask for. He will beg me to whip up a batch of no bake cookies just to snack on!
When I made these Pumpkin No Bake Cookies, he loved them!! The pecans and coconut add so much flavor – and I love the light chocolate drizzle on top!
No Bake Pumpkin Cookies
Here’s What You Need:
Ingredients:
1/2 cup canned pure pumpkin
1/3 cup peanut butter (smooth or chunky)
1/2 cup butter (1 stick)
1/4 cup milk
1/2 cup white sugar
1 1/2 teaspoon vanilla
4 cups quick oats
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/2 cup chopped pecans
1/2 cup unsweetened coconut + extra to garnish
Melted chocolate for drizzle (I used 1/2 cup)
Directions:
In a saucepan, combine pumpkin, peanut butter, butter, milk, and sugar.
Bring to a boil over medium heat and stir continually (do not try to rush this process).
Once mixture is boiling, reduce heat to low and allow to simmer for 5 minutes (do not over cook).
Remove mixture from heat and allow to cool for 5 minutes.
Stir in vanilla.
Add quick oats, pumpkin pie spice, cinnamon, salt, pecans, and coconut – mix well.
Line a baking sheet with parchment paper and use a 1/4 measuring cup to scoop about 1/2 – 2” cookies onto the baking sheet and garnish with coconut (optional).
Allow to cool completely.
Once cool, melt chocolate in the microwave in 20-30 second increments until melted. Drizzle over cookies and enjoy!
Can I use walnuts instead of pecans?
YES!! Absolutely! You could even put almonds in these cookies! They are the best cookies for adding and taking away the “extras”. Cranberries would be another fun addition!
How do I get my no bake cookies to harden?
If your cookies are not coming together as quickly as you’d like, just put them in the refrigerator. You could even put them in the refrigerator to cool and then drizzle the chocolate. Or drizzle the chocolate and then let them cool.
You really can’t mess them up either way, but either time on the counter or time in the fridge will help them harden.
