  • Eggs
  • Unsalted Butter

  • Powdered Sugar
  • Water

How to make this Pop Tart Cookies and Creme Cookies Recipe

First, start by lining a baking sheet with parchment paper. Also, preheat your oven to 375 degrees.

Add the brownie mix and unbleached flour to a medium size mixing bowl.

Next, mix in the eggs, melted butter, chocolate syrup, and vanilla. Once everything is well combined, the batter will be sticky.

Then, take 4 Cookies and Creme Pop-Tarts and cut them into 8 pieces.

(To cut them, I like to put 2 Pop Tarts back to back with the frosting facing the outside and slice them at the same time.)

Now, use a cookie scoop (I used a 1 tablespoon scoop) to create the cookie dough balls. Place them on the cookie sheet about 2″ apart.

Put 2 Pop-Tart pieces on top of each cookie dough ball. Then place another cookie dough ball on top of the Pop Tart pieces to make a “sandwich”.

Next, press the sides down of each “sandwich”. (The dough will be too sticky to roll it into a ball.)

Then bake the cookies for 9 minutes. Once the first batch is done, repeat the process until you have used all the brownie mix.

When the cookies come out of the oven, allow them to cool completely on the baking sheet.

Time to make the frosting! Whisk together the powdered sugar and water in a small bowl. (To adjust the consistency, add more water if too thick and more powdered sugar if too thin.)

Finally, once the cookies have cooled, top them with some frosting and the remaining crushed Pop-Tarts. Once the frosting has set, serve and ENJOY!

Yields: 13 cookies
Preparation time: 15 minutes
Baking time: 9 minutes
Additional time: 10 minutes

Ingredients
1 box of brownie mix (Betty Crocker 18.3oz box)
1/4 cup unbleached flour
2 eggs
1/4 cup unsalted butter, melted
1 tablespoon chocolate syrup
1 teaspoon vanilla
4-6 Cookies & Creme Pop-Tarts

Topping Ingredients:
2 cups powdered sugar
1/4 cup water
Chocolate cookie crumbs or broken Cookies & Creme Pop-tarts

Directions:
Line a baking sheet with parchment paper and preheat the oven to 375 degrees.
In a medium size mixing bowl, combine the brownie mix and unbleached flour together.
Stir in the eggs, unsalted butter (melted), chocolate syrup, and vanilla.
Mix well until combined (batter will be sticky).
Cut 4 Cookies & Creme Pop-Tarts in 8 pieces – you will need 2 pieces for each cookie. I like to place two Pop-Tarts back to back and then cut them at the same time so the frosting is facing the outside.

Remove from the oven and let cool completely.
While the cookies cool, make the icing by whisking the powdered sugar and water in a small bowl until smooth (add extra water if it’s too thick or more powdered sugar if it’s too thin).
After the cookies are cooled, spoon the frosting onto each cookie (about 1 tablespoon) and garnish with crushed chocolate cookies or left over crushed Pop-Tarts.

Notes:
● Brownie batter will be sticky when you make the cookie dough balls.
● You can omit the chocolate syrup from the recipe, but I love how chewy it makes the brownie cookies.
● For the topping, if you are using crushed chocolate cookies, remove the frosting from the middle before crushing them up. Feel free to use crushed up Pop-Tarts instead.
● Do not over-bake the cookies or they will get hard. Underbake them a little (9 minutes is the sweet spot for mine) and let them cool completely on the baking sheet.

What is the secret to moist Cookies and Creme Pop Tart Cookies?

Don’t over bake your cookies! I bake my cookies at 375 degrees for about 9 minutes. The edges will be set, but the center will still be soft.

Then I leave my cookies on the baking pan until they are completely cooled. This makes for a perfect chewy cookie!
