What you need for Strawberry Cake Mix Cookies
- A box of strawberry Cake Mix – I used Betty Crocker, but you can use any cake mix.
- Powdered Sugar, Strawberries, and lemon juice for the glaze.
- Cookie Cutters to shape the cookies after they bake so that you can make perfect circles!
How to make Strawberry Cake Mix Cookies with Strawberry Lemon Glaze
I can’t wait for you try these delicious cookies! So easy and so good – you’ll be making them again and again! Here’s how to make Strawberry Cake Mix Cookies with Strawberry Lemon Glaze!
First, add to the eggs, oil, and vanilla to the cake mix and mix all together.
Next, use a cookie scoop to make the cookie dough balls. Place them on a prepared baking sheet and bake for 10 minutes.
Now it’s time to make the strawberry lemon glaze! Blend the strawberries and lemon juice together in a food processor.
Then add the strawberry mixture to the powdered sugar and mix together until smooth. (You can always add more powdered sugar or water to make the glaze thicker or thinner.)
Once the cookies have cooled, set them on a cooling rack. Spoon the glaze onto the tops of the cookies.
Finally, you can add a little sprinkle of powdered sugar for the finishing top!
Strawberry Cake Mix Cookies with Strawberry Lemon Glaze
Preparation time: 10 minutes
Baking time: 10 minutes

Ingredients:
1 box of strawberry cake mix (I used Betty Crocker)
2 eggs
1/4 cup canola oil or vegetable oil
1 teaspoon pure vanilla extract
Strawberry Lemon Glaze Ingredients
2 cups powdered/confectioners sugar
1/3 cup strawberries (chopped)
1 tablespoon lemon juice or water
Directions:
Preheat the oven to 350 degrees.
In a large mixing bowl, combine the strawberry cake mix, eggs, oil, and vanilla together and mix well (you can use a fork or a hand mixer).
Line a baking sheet with parchment paper and create 1 tablespoon cookie dough balls with a cookie scoop and put the cookies about 2” apart on the baking sheet.
Bake for 10 minutes – watch for the edges to start browning.
Remove from the oven and let the cookies cool on the baking sheet while you make the glaze.
To make the glaze, blend strawberries and lemon juice together in a food processor or blender.
Add strawberry mixture to powdered sugar and mix until smooth (if the glaze is too thin, add powdered sugar. If it’s too thick, add more lemon juice or water).
Transfer cookies to a cooling rack and spoon glaze on top of cookies.
Once cooled, sprinkle with powdered sugar (optional).
Notes:
● Feel free to skip the glaze and just sprinkle cookies with powdered sugar after they cool.
● For the glaze, blend the strawberries to a puree, or leave larger chunks.

What is the difference between Cake Mix and Cookie Mix?
Cake mix is much lighter and thinner than cookie mix. By using a cake mix for these cookies, you will have soft and chewy cookies with a cake-like texture more than a cookie.
Can you freeze cookies made from Cake Mix?
Yes! Absolutely. Just whip up your batter and then create cookie dough balls to put in the freezer in an air-tight storage container.
I like to use food saver bags to get all of the air out of my cookie dough that I freeze.
Once ready to use, just place the cookie dough balls on a baking sheet and bake according to the directions – so easy!
