How to make Strawberry Lemonade Brownie Bars with Cake Mix

Start by lining a 9×13″ baking pan with parchment paper. Then preheat the oven to 350 degrees.

In a bowl, mix the lemon cake mix, lemon juice, eggs, and lemon zest together.

Then in another bowl, combine the strawberry cake mix, lemon juice, and eggs until everything is well mixed.

Next, add the fresh strawberries to the strawberry cake mix batter. Mix all together.

Now spoon the lemon batter into the prepared baking pan. Spoon the batter into different sections of the pan, leaving room for the strawberry batter.

Add in the strawberry batter in the remaining spots until the batters are evenly dispersed in the pan.

Next, use a knife to swirl the 2 batters together. (But don’t mix it completely!) Also smooth out the top.

Bake in the oven for 25 minutes. If a toothpick inserted into the middle of the cake comes out clean, then it’s ready!

Make sure to let your brownies cool COMPLETELY! (Mine took 1 hour to cool.) Once cooled, cut the brownies into squares.

Make the glaze by mixing powdered sugar and lemon juice together in a bowl.

Finally, drizzle the glaze over the brownies. Allow the glaze to set before serving. YUM!

Yields: 15 brownies
Preparation time: 15 minutes
Baking time: 25 minutes
Additional time: 1 hour

Strawberry Brownies Ingredients:
1 15.25 oz box of strawberry cake mix (I used Betty Crocker)
1/3 cup lemon juice
2 large eggs
1/2 cup fresh strawberries (chopped)
Lemon Brownies Ingredients:
1 15.25 oz box of lemon cake mix (I used Betty Crocker)
1/3 cup lemon juice
2 large eggs
2 teaspoons lemon zest
Glaze Ingredients:
1 1/2 cups powdered sugar
3 tablespoon lemon juice (add a few extra drops if needed for desired consistency)

Directions:
Preheat the oven to 350 degrees and line a 9×13” pan with parchment paper.
You will need two medium sized mixing bowls, one for the lemon brownies and one for the strawberry brownies.
In one bowl, combine the lemon cake mix, lemon juice, eggs, and lemon zest. Mix well until combined.
In the other bowl, combine the strawberry cake mix, lemon juice, and eggs. Mix well until combined.
Stir in the fresh strawberries until combined.
Spoon the lemon batter into the pan in several different sections leaving room for the strawberry batter.
Fill in the empty sections with the strawberry batter until the pan is even.
Use a knife to Swirl the two flavors together and smooth the top – but not mix completely.
Bake for 25 minutes or until a toothpick can be inserted into the middle and comes out clean.
Let the brownies cool completely in the pan (this took mine 1 hour).
Remove the parchment paper from the pan (or leave the brownies in the pan) and cut into pieces.
To make the glaze, combine the powdered sugar and lemon juice together in a small bowl and whisk until smooth.
Spoon the glaze over the brownies or drizzle on top.
Let the glaze cool completely.

Notes:
● Option to cut the edges off or to leave them on the brownies after you remove them from the pan.
● If the glaze is too thick – add some water, if it’s too thin – add a little more powdered sugar.
