What you will need to make Chocolate Chip Pumpkin Cookies
- For these cookies, you will need classic pantry ingredients for the cookies like flour, sugar, brown sugar, vanilla and spices.
- Pure pumpkin puree! Pumpkin makes an easy substitute for egg and oil in baking recipes.
- Pumpkin Pie Spice and Mini Chocolate Chips – these two flavors really make these cookies pop and have the best flavor for Fall!
How to Make Chocolate Chip Pumpkin Cookies
These Chocolate Chip Pumpkin Cookies are SO simple and tasty! They will quickly become a fall favorite!
First, cream together the butter, sugar and brown sugar in a bowl.
Next, combine in the pumpkin puree, egg yoke, and vanilla.
Mix altogether until it is completely combined.
You will then stir in the dry ingredients (flour, baking soda, salt, and pumpkin pie spice.) And finally, gently fold in the mini chocolate chips. (But make sure to save some for later!)
Using a cookie scoop, make cookie dough balls and place them on a prepared cookie sheet to bake.
Once the cookies are done baking, top them with the remaining chocolate chips immediately. This will melt the chocolate and you can spread it on top of the cookie for the finishing touch! Ta-da!
Transfer the cookies to a cooling rack to finish cooling. Yum!
Chocolate Chip Pumpkin Cookies Recipe
Yields: 13 cookies
Preparation time: 10 minutes
Baking time: 18 minutes
Additional time: 20 minutes
Ingredients:
1/2 cup unsalted butter, 1 stick (softened)
3/4 cup white granulated sugar
1/2 cup light brown sugar
1/4 cup pumpkin puree
1 egg yoke
1 teaspoon pure vanilla extract
1 1/2 cup unbleached flour
1/2 teaspoon baking soda
1/2 teaspoon table salt
1/4 teaspoon pumpkin pie spice
1 1/2 cup mini semi sweet chocolate chips
Directions:
Preheat the oven to 300 degrees and line a baking sheet with parchment paper.
Using a hand mixer, or fork, cream together butter, sugar, and brown sugar on low.
Add pumpkin, egg yoke, and vanilla and mix until combined.
Slowly stir in flour, baking soda, salt, and pumpkin pie spice.
Fold in 1 1/4 cup mini chocolate chips (save 1/4 cup for garnishing after baking).
Using a 2 tablespoon cookie scoop, create heaping 2 tablespoon cookie dough balls and place them 2” apart on the prepared pan.
Bake for 18-20 minutes or until the edges start to brown.
Remove from the oven and let cool on the baking sheet for 15 minutes before moving to a cooling rack.
Immediately after removing from the oven add chocolate chips to the tops of cookies and spread chocolate once it melts a little with a toothpick.

I love the chocolate drizzle on top of these cookies, however, if you are in a hurry or you don’t want to add the chocolate chips on top, that’s fine too!
I used a heaping 2 tablespoon cookie scoop to make these cookies. If you want smaller cookies, either level the cookie scoop or use a smaller scoop.
Cooking time may change according to the size of the cookies, however, I loved the large bakery style cookies for this recipe!
