Here’s what you will need for this Brownie Bites S’mores Cookie Recipe!
- Dark Chocolate Brownie Mix and Flour
- Eggs, Butter, Chocolate Syrup, Vanilla
- Miniature Chocolate Chips
- Graham Crackers (about 5)
- Regular Sized Marshmallows (about 16)
- Hersey’s Chocolate Bars (about 3-4)
Supplies you’ll need:
- Parchment Paper
- Silpat Baking Mats (alternative option to Parchment Paper)
- Cookie Scoops (my FAVS!)
- Cooling Rack
- Baking Sheets
- Mixing Bowls
- Spatula

These S’mores Cookies truly taste just like a campfire s’more, even down to the crunch of the graham cracker!
Layered with a graham cracker on the bottom, brownie cookie in the middle, and topped with a marshmallow and Hershey’s bar! Pure deliciousness in every bite!
Brownie Bites
Brownie Bites made from a Dark Chocolate Brownie Mix! Just add in Flour, Eggs, Butter, Chocolate Syrup, Vanilla, and Chocolate Chips! I am LOVING how soft and chewy they are with every bite!
Brownie S’mores Cookies
Brownie S’mores Cookies topped with toasted Marshmallows! This step really gives these S’mores Cookies a campfire vibe! You are NOT going to want to skip out on this step!
How to make Brownie Bites S’mores Cookies!
Start by lining your baking sheets with parchment paper, then preheating your oven to 375.
(You can also use a Silpat Baking Sheet if you want)
Next, add the brownie mix and flour to a mixing bowl.
Now add in the wet ingredients – eggs, melted butter, chocolate syrup, and vanilla.
Use a fork to mix in the chocolate chips.
Next, use a cookie scoop to create the cookie dough balls.
Space them out on the parchment paper and bake for 7 minutes.
While you wait for the cookie to bake, cut the marshmallows in half.
Also, prep the graham crackers by breaking them into small squares.
Then, remove the cookies (after the 7 minutes) from the oven and use a spatula to slide a graham cracker under each cookie.
Also, top each cookie with a cut marshmallow half.
Next, turn the broiler in the oven on HIGH and put the cookies back in the oven for up to 1 minute.
(BE CAREFUL!!!) Watch the marshmallows carefully that don’t burn.
Finally, once the cookies are out of the oven, let them cool for 7-8 minutes on the baking sheet.
Then top each one with a small Hershey’s bar and sprinkle on crushed graham cracker. DELICIOUS!
Brownie Bites S’mores Cookie Recipe
Yields: 32 cookies
Preparation time: 15 minutes
Baking time: 7 minutes
Additional time: 1 minute + 7 minutes
Ingredients:
1 box of Dark Chocolate Brownie Mix
¼ cup unbleached flour
2 eggs
¼ cup butter, melted
1 tablespoon chocolate syrup
1 teaspoon vanilla
1/2 cup of miniature chocolate chips
5 Graham Crackers (4 bars broken into 8 squares + 1 extra for garnishing)
16 Regular Sized Marshmallows
3-4 Hershey Chocolate Bars
Directions:
Preheat the oven to 375 degrees and line a couple of baking sheets with parchment paper (you can also use a silpat baking sheet if you’d rather).
In a large bowl, combine the brownie mix and flour together.
Use a hand mixer or fork to stir in all of the wet ingredients (eggs, melted butter, chocolate syrup, and vanilla).
Carefully mix in the chocolate chips (I used a fork).
Using a 1 tablespoon cookie scoop, create cookie dough balls with the batter.
Arrange the cookie dough balls on the prepared baking sheet about 2” apart and bake for 7 minutes.
While the cookies are baking, break your graham crackers into small squares (I took one bar and broke it in 8 pieces instead of 4), break your chocolate into pieces, and cut your marshmallows in half.
Remove the cookies from the oven and use a spatula to slide a graham cracker under each cookie (if you do this before you bake them the graham cracker will burn – still tastes great though if you want to skip this step!)
Put half of a marshmallow (cut side down) on the top of the cookie – press it into the cookie.
Turn the oven broiler on high and place the cookies back in the oven for around 1 minute – watch them closely because this can take seconds to a little over a minute depending on your broiler – watch them carefully.
Remove the cookies from the oven as soon as the marshmallow starts to brown.
Let the cookies cool for 7-8 minutes on the baking sheet before topping with a piece of chocolate bar.
Garnish with crushed graham cracker on top – optional.
Notes:
● Brownie S’mores Cookies can be stored at room temperature for up to 1 week in an airtight container.
● Graham Cracker bottom and garnish is all optional but that is what makes it a s’mores!
● Don’t over bake your cookies or the brownie cookie will get dry.
● Let cookies cool completely if you want the top chocolate to harden to stack and store. If you don’t mind the chocolate melty, eat them warm!
● For the brownie mix, I used a Betty Crocker 16.3 ounce box

How to make soft and chewy S’mores Cookies?
Only bake your cookies for a total of 9 minutes. (Overbaking your cookies will dry them out and made them hard and crunchy.)
Then let them cool for several minutes on the hot baking sheet to finish “baking”. This gives them a soft and chewy center – my personal favorite!

Brownie S’mores Cookies need to kept in an airtight container. And they can last for up to 1 week.
