Best Cookie Croissant Tips

If you need to save some time before an event or party, freeze the cookie dough in cookie balls and make them as you need them or right before you’re ready to serve.

The sad thing about these cookies is they don’t keep as well as some cookies because the croissant gets hard.

Can be stored in an airtight container at room temperature for a day or two. Just microwave for about 10-15 seconds before eating.

Chocolate Chip Cookie Croissant Recipe

Yields: 14 Cookie Croissants
Preparation time: 15 minutes
Baking time: 10 minutes
Additional time: 10 minutes

1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar
1 egg
1 teaspoon pure vanilla extract
1 1/4 cup unbleached flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 cup mini semi-sweet chocolate chips (divided)
15 mini croissants
Powdered Sugar to Garnish

DIRECTIONS:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Cream the butter, granulated sugar, and brown sugar together.
Mix in the egg and vanilla.
Stir in the flour, baking soda, and salt.
Fold in 1 cup of mini chocolate chips.

Use a one tablespoon cookie scoop to create cookie dough balls (you will need two for each cookie).
Stuff each croissant with 1 cookie dough ball and spread it evenly.
Use another cookie dough ball and flatten it across the top of the croissant.
Do this until your cookie dough is gone. Arrange the croissants on the prepared baking sheet and bake for 10-11 minutes or until the cookie dough looks set.
Let the crookies cool for at least 10 minutes on the baking sheet.
While the crookies cool, top each with a few chocolate chips on each cookie.
Melt the remaining chocolate chips in a microwave safe bowl in 20 second increments until smooth and melted – stirring between.
Drizzle chocolate over the cookie croissants and dust with powdered sugar.
Garnish with kosher salt and let cool completely. Can cool on the baking sheet or be transferred to a cooling rack.

Notes:

  • Crookies can be stored for 1-2 days in an airtight container at room temperature.
  • Skip the chocolate drizzle and powdered sugar if you wish.
  • Use pre-made cookie dough or make your cookie dough ahead and freeze in cookie dough balls and make when you’re ready.
  • Best served warm and melty.
