How to make an Easy Pineapple Cake Recipe
The easiest way to make a pineapple cake recipe is to use a box of cake mix. I used a yellow cake mix as a base for my pineapple cake and it was so simple.
If you want to make it a moist cake, add the sweetened condensed milk. However, you can always leave out this step for a simple pineapple cake.
Pineapple Poke Cake
Turn this Easy Pineapple Cake into a Pineapple Poke Cake by poking holes in the cake once it’s baked and pouring sweetened condensed milk over it.
You could also pour vanilla pudding over the cake for another poke cake option. Top with powdered sugar or a cream cheese frosting.
Easy Pineapple Cake Recipe
INGREDIENTS:
1 classic yellow cake mix
1 20 ounce can of pineapple chunks (not drained)
3 eggs
1/3 cup canola oil or vegetable oil
1 20 ounce can of sliced pineapple (drained) – optional
1 can of sweetened condensed milk (14 oz) – optional
1/2 cup powdered sugar
DIRECTIONS:
Preheat the oven to 350 degrees and spray a 9×13” glass baking dish with cooking spray.
In a large mixing bowl, combine cake mix, pineapple chunks, eggs, and oil together with a hand mixer.
Pour batter into prepared pan.
Top batter with drained sliced pineapples (this is totally optional).
Bake for 28-33 minutes.
Let cool for 10 minutes and then poke the cake with a fork and pour sweetened condensed milk over the entire cake (this step is completely optional).
Let cool completely.
Dust with powdered sugar.

Do I drain the pineapple for pineapple cake?
You will want to drain the pineapple slices if you choose to use them for a little extra pineapple in your cake. I did not drain the pineapple chunks – I think you could though.
Do you frost a pineapple cake?
I dusted some powdered sugar on my pineapple cake to top it off, but you could always leave this part out.
Does Pineapple Cake need to be refrigerated?
Yes! I would refrigerate pineapple cake so that it does not spoil. Keep in the refrigerator for up to 3 days.
