• Lemon Juice (don’t skip this – it really makes the flavor POP!)
• Fresh Strawberries
• White Baking Chips

You’ll also need:

• Baking Sheet
• Parchment Paper
• Cookie Scoop (I used a 2 tablespoon cookie scoop)

Strawberry White Chocolate Cake Mix Cookies

With just a few ingredients you’ll have one of the BEST Summer Cookies everyone will love! These Strawberry White Chocolate Cake Mix Cookies are the perfect treat to take to a pool party or a picnic.

They are also great for birthdays and celebrations! Give them a try and let me know how your people like them!

How to make Strawberry White Chocolate Chip Cake Mix Cookies

Start by lining a baking sheet with parchment paper and preheat your oven to 350 degrees.

Add the strawberry cake mix, melted butter, eggs, and lemon juice to a bowl.

Mix all the ingredients together until fully combined.

Next, add in 1/2 cup of fresh strawberries and 1 cup of white baking chips. Mix them in well.

Then use a cookie scoop (I used a 2 tablespoon scoop) to make the cookie dough balls. space them about 2″ apart on the baking sheet.

If you’d like add the remain strawberries to the tops of each cookie dough ball. Bake the cookies for 11 minutes. (Or when the edges start to brown.)

Then remove the cookies from the oven and add a few white baking chips to the tops of each cookie.

Finally, let the cookies cool on the baking sheet for about 10 minutes and then move them to a cooling rack. Once they have cooled, serve and ENJOY!

Strawberry White Chocolate Chip Cake Mix Cookies

Yields: 18 cookies
Preparation time: 10 minutes
Baking time: 11 minutes
Additional time: 10 minutes

Ingredients:
1 box of strawberry cake mix (15.25 ounces)
6 tablespoon unsalted butter, melted
2 eggs
2 tablespoons lemon juice
1 cup fresh strawberries chopped, divided
1 1/2 cup white baking chips, divided

Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a medium sized mixing bowl, combine cake mix, melted butter, eggs, and lemon juice together.
Stir in ½ cup fresh strawberries and 1 cup of white baking chips.
Use a 2 tablespoon cookie scoop and place cookies about 2” apart on the baking sheet.
Top cookies with remaining chopped strawberries (optional).
Bake for 11 minutes or until the edges just start to brown (watch them closely).
Remove cookies from the oven and top with remaining white baking chips.
Let cool for 10 minutes on the baking sheet before transferring to a cooling rack

Notes:
● Cookies can be stored for 1-3 days in an airtight container. Cookies can also be stored in the refrigerator for a little longer.
● Cookies are best fresh so the strawberries don’t get soggy.
● Use fresh strawberries and not frozen or the cookies will get soggy.

Make sure you’re not baking your cookies at too hot a temperature. Or that you’re not baking them too long.

I’ve found that 350 degrees for 11 minutes is perfect for the these Strawberry White Chocolate Chip Cookies. It perfectly bakes them without making them crunchy.

Then, leave them to cool on the baking rack for about 10 minutes to let the center set – leaving them soft and chewy! YUM!

Can I use frozen strawberries instead of fresh strawberries?

Use FRESH strawberries! I do not recommend using frozen strawberries – it will make your cookies soggy.
