How to make this Easy Rocky Road Fudge Recipe!
This Easy Rocky Road Fudge Recipe is SO EASY! Packed with Chocolate, Walnuts, and Marshmallows! YUMMY!
Start by lining a square pan (8×8″) with parchment paper. Then make a boiler and add in the chocolate chips.
Then, add in the sweetened condensed milk, butter, and salt. Mix all the ingredients together until they are melted and smooth.
Once the ingredients are melted, remove from the heat and mix in the vanilla.
Next, add and mix in 2 cups of mini marshmallows and 3/4 cup of walnuts. (You’ll use the rest for garnishing)
Then pour the fudge into the prepared pan. Sprinkle the rest of the walnuts and marshmallows on top of the fudge.
Place the fudge in the microwave and heat for 30 seconds intervals until the marshmallows begin to melt. (It will take about 2 minutes total.)
You want the marshmallows on top to stick to the fudge. Use a toothpick to swirl the marshmallows around. (I love the swirled look this gives to the fudge!)
Finally, let your fudge set completely for 4-6 hours (or even overnight) on the counter. Once your fudge has set, slice it into squares and it’s ready to serve! ENJOY!
Easy Rocky Road Fudge Recipe
Yields: 16 Pieces
Preparation time: 20 minutes
Baking time: None
Additional time: 2-4 hours in the refrigerator or 6-8 hours at room temperature to cool
Ingredients:
3 cups mini semi-sweet chocolate chips
1 can sweetened condensed milk (14 ounces)
2 tablespoons unsalted butter
1/4 teaspoon salt
1 teaspoon vanilla
3 cups marshmallows (divided)
1 cup walnuts (divided)
Directions:
Line an 8×8” square pan with parchment paper and set aside.
In a double boiler, combine chocolate chips, sweetened condensed milk, butter, and salt together.
Heat on the stove over medium heat until fully melted, stirring continuously.
Once melted, remove from heat and add the vanilla.
Stir in 2 cups of marshmallows and 3/4 cup walnuts.
Transfer to the prepared pan and press the fudge down until smooth.
Top fudge with the rest of the marshmallows and walnuts.
Heat the fudge in the microwave in 30 second increments until the marshmallows get a little melty (it took about 2 minutes total) – this helps the marshmallows to stick to the top of the fudge and create a melty look.
Use a toothpick to swirl some of the marshmallows under the top layer of marshmallows.
Cover and let cool for 4-6 hours at room temperature or overnight.
Once the fudge is set, cut the fudge into 16 pieces (or more if the pieces are smaller).
Store in an airtight container at room temperature for 2 weeks.
Notes:
● Option to add all of the marshmallows and walnuts to the fudge batter before pouring into the prepared pan or omit 1 cup of marshmallows.
● Option not to microwave the fudge to create the melty look.

What is the secret to smooth Rocky Road Fudge?
Be sure to melt the ingredients on the double boiler completely. Mixing them together will give you a nice and smooth texture once your fudge is set.
Which is better for Rocky Road Fudge – evaporate or condensed milk?
Sweetened condensed milk! You can’t use evaporated milk when making fudge. Sweetened condensed milk gives fudge that rich taste and creamy texture. In this case, evaporated milk CAN NOT e substituted for sweetened condensed milk.
How long does Rocky Road Fudge stay fresh?
This Rocky Road Fudge will stay good for up to 2 weeks. (Although mine gets eaten before then anyway – yum!) Just make sure to store it in an airtight container at room temperature.
