Easy Pumpkin White Chocolate Chip Cookies

Easy Pumpkin White Chocolate Chip Cookies! Mix up the butter, sugar, and wet ingredients. Then add in the dry ingredients with the oats and white chocolate chips.

My favorite tip is to let the cookies cool on the baking rack for a few minutes before moving them to a cooling rack.

This creates a soft middle and chewy bite for every cookie!

How to Make The Best Pumpkin White Chocolate Chip Oatmeal Cookies Recipe

First, start by preheating the oven to 300 degrees. Prepare a baking sheet by lining it with parchment paper.

Next, add melted butter, sugar, and brown sugar to a bowl and mix together well.

Now mix in the pumpkin puree, egg yoke, and vanilla.

After that, measure in the dry ingredients (flour, baking soda, salt, cinnamon, and pumpkin pie spice).

Stir in the oats and 1/2 cup of the white chocolate chips. (The rest are for after baking!)

Use a cookie scoop (I used a 2 tablespoon scoop) to make the cookie dough balls.

Space the cookie dough balls out on the baking sheet about 2″ apart.

Bake the cookies for 15 minutes (until the edges begin to brown).

Once the cookies are done, taken them out of the oven and top them with the remaining white chocolate chips.

Finally, let the cookies cool on the cooling rack for about 8 minutes. You can transfer the cookies to a cooling rack to finish cooling.

This is optional, but you can also sprinkle sea salt on top before serving. ENJOY!

Ingredients:
1/2 cup unsalted butter (melted)
1/2 cup white granulated sugar
1/2 cup light brown sugar
1/4 cup pumpkin puree
1 egg yoke
1 teaspoon pure vanilla extract
1 1/2 cup unbleached flour
1/2 teaspoon baking soda
1/2 teaspoon table salt
1/4 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice
1 cup quick oats
1 cup white chocolate chips, divided
Sea Salt to Garnish (optional)

Directions:
Preheat the oven to 300 degrees and line a baking sheet with parchment paper.
Combine melted butter, sugar, and brown sugar together in a medium sized mixing.
Add the pumpkin, egg yoke, and vanilla and mix until combined.
Stir in the flour, baking soda, salt, cinnamon, and pumpkin pie spice.
Fold in oats and about 1/2 cup of white chocolate chips.
Using a 2 tablespoon cookie scoop, create cookie dough balls and place them 2” apart on the prepared baking sheet.
Bake for 15 minutes or until the edges start to brown.
Remove from the oven and press extra white chocolate chips on top.
Let cool on the baking sheet for 8 minutes before transferring to a cooling rack.

● Cookie dough can be frozen in an airtight container for up to 3 months.
● Swap the white chocolate chips for pecans or add pecans on top for another yummy fall flavor.
