What will you need to make these Easy Strawberry Cheesecake Cookies?
For the Strawberry Cheesecake Filling:
- Cream Cheese, Powdered Sugar, and Strawberry Sauce
- Butter, Sugar, Egg, Vanilla, Flour, Baking Powder, Salt, and Baking Soda
- A Cookie Scoop (I used a 1 TBSP scoop), Parchment Paper, and a Baking Sheet!
For the Homemade Strawberry Sauce you will also need:
- Strawberries
- Vanilla
- Sugar
- Water
How to make this Easy Strawberry Cheesecake Cookies Recipe
I am ALL ABOUT Strawberry desserts! Making fresh and delicious treats are one of favorite things to do all Summer long! And these Strawberry Cheesecake Cookies are packed with delicious strawberry flavor – inside and out!
First, start by making the strawberry filling. Mix together the cream cheese, powdered sugar, strawberry sauce, and vanilla.
Chill in the refrigerator for 45 minutes (at least) while you make the cookies.
For the Strawberry Cheesecake Cookies, combine the butter and sugar together, then add the egg and vanilla.
Next, mix in the dry ingredients (flour, baking powder, salt, and baking soda). Add in about 2 tablespoons of Strawberry Sauce and fold in gently, but not entirely.
Chill the dough in the refrigerator for about 30 minutes.
Now, use a cookie scoop to make cookie dough balls. Flatten the middle of one dough ball and add 1/2 teaspoon of Strawberry Cheesecake Filling on top. Place another cookie dough ball on top and seal the edges around to enclose the cheesecake filling inside.
Place the cookie dough balls in the freezer for about 10 minutes, and then bake at 350 degrees for 13-14 minutes.
To finish, once the cookies are done baking, allow them to cool completely on the cookie sheet. YUM!
How to make Strawberry Sauce
This Homemade Strawberry Sauce is SUPER easy and the perfect addition to cookies, cakes, and desserts! It’s one my absolute favorites!
First, add the strawberries, sugar, and water to a saucepan and heat until boiling. Simmer on LOW for 10 minutes and mash the strawberries.
Next, remove from heat and stir in the vanilla. Let the sauce cool before using it in more recipes!
Easy Strawberry Cheesecake Cookies Recipe
Yields: 15-16 cookies
Preparation time: 1 hour
Baking time: 13-14 minutes
Additional time: 10 minutes
Strawberry Cheesecake Filling Ingredients:
4 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla
2 tablespoon strawberry sauce

1/2 cup of unsalted butter, softened
1 cup of sugar
1 egg
1 teaspoon vanilla
1 1/2 cups unbleached flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
2 tablespoons strawberry sauce
Directions:
Strawberry Cheesecake Filling Directions:
Make the strawberry filling combining the cream cheese, powdered sugar, strawberry sauce, and vanilla together.
Mix well until smooth.
Place the filling in the refrigerator for at least 45 minutes while you make the cookies.
Strawberry Cheesecake Cookies Directions:
In a medium sized mixing bowl, cream the butter and sugar together.
Add the egg and vanilla and mix well.
Stir in the flour, baking powder, baking soda, and salt.
Add two tablespoons of strawberry sauce and gently fold into the batter (don’t fully mix it in).
Refrigerate dough for 30 minutes.
Once the dough is chilled, line a baking sheet with parchment paper and create 1 tablespoon cookie dough balls (you will need two for each cookie).
Press down the middle of one of the cookie dough balls in the set.
Grab the cheesecake filling from the refrigerator and place about ½ teaspoon of cheesecake filling in the prepared hole and then top it with the other cookie dough ball and press the edges together to seal the cheesecake filling inside.
Freeze the cookie dough balls for 10 minutes & preheat the oven to 350 degrees.
Bake for 13-14 minutes.
Remove the cookies from the oven and let them cool on the cookie sheet completely.

1/2 cup fresh strawberries, chopped
2 tablespoons water
2 tablespoons white granulated sugar
1/2 teaspoon vanilla
Strawberry Sauce Directions:
Make the sauce first by combining the strawberries, sugar, and water together in a saucepan.
Heat on the stove over medium heat until boiling.
Reduce heat to a simmer and mash strawberries occasionally.
After 10 minutes remove the sauce from the stove and add the vanilla.
Let the sauce cool.
