  • OREOS!!! You’ll need about 43 Oreos – a whole package!
  • Cream Cheese, Powdered Sugar, Sour Cream, and Vanilla

Throw all of the ingredients together and then let it come together and set in the refrigerator or freezer – you can even wait a day or two before serving so you can make it ahead of time!

Oreo Cheesecake Bars are so easy to make! I love that you can throw these together a couple of days (or even just the night) before you want to serve them!

Let them sit overnight or for a couple of days in the freezer and pull them out about 15 minutes before you’re ready to serve them and add the toppings!

Oreo Cheesecake Recipe with Sour Cream

The thing I love most about this Oreo Cheesecake Recipe with Sour Cream is that it uses cream cheese and sour cream to make the base with powdered sugar so you don’t have to bake it!

The sour cream and cream cheese help to give it the flavor of cheesecake without the fuss of baking a cheesecake!

How to make Simple Oreo Cheesecake Bars No Bake Recipe

Start by lining a 8×8 baking dish with parchment paper. (You could also use a 9×9 baking dish.) Add about 20 Oreos to a food processor (or a zipper bag) and crush the Oreos until fine.

Mix together the crushed Oreos and melted butter. Pour the Oreo crumb into the baking dish and press down to create the crust. Place in the freezer while you make the cheesecake layer. (About 10 minutes.)

Next, cream together the cream cheese and powder sugar with a hand mixer (or in a stand mixer). Add in the vanilla and sour cream and mix altogether until smooth.

Then, place about 15 Oreos in a zipper bag and crush them into crumbs. (You can crush them as little or as much as you prefer.) Add the crushed Oreos to the cheesecake mixture and fold once. (DON’T over mix!)

Now, pour the Oreo cheesecake batter into the square baking dish on top of the Oreo crust. As you pour, fold in the crushed Oreos into the batter more and smooth out the top.

Chill the cheesecake and allow it to set up in the refrigerator for 4-6 hours. You could also freeze it for 2-4 hours. (I put mine in the freezer overnight.)

Once your cheesecake is set, remove from the baking dish and cut it into 16 squares. (If it’s frozen, allow it to sit at room temperature for 10 minutes before slicing.)

For the topping, crush about 8 Oreos in a zipper bag. (I like to remove the filling before crushing them.)

Heat the chocolate chips in the microwave in 30 second increments until melted, stirring in between increments. (Mine took two 30 second increments.)

Next, add the melted chocolate to a zipper bag and cut off the tip. Drizzle the melted chocolate over each cheesecake bar.

Finally, immediately top each cheesecake bar with the crushed Oreos. You may want to drizzle the chocolate a few bars at a time so the chocolate won’t harden before adding the Oreos. 

You can serve these right away or refrigerate them until you’re ready to serve. Enjoy!

Ingredients
Crust Ingredients:
20 Oreos, crushed (about 2 cups)
5 tablespoons of unsalted butter, melted

Cheesecake Layer Ingredients:
12 ounces of cream cheese, softened
1 cup powdered/confectioners sugar
2/3 cup regular sour cream
1 teaspoon pure vanilla extract
15 Oreos, crushed

Topping Ingredients:
1/2 cup mini semi-sweet chocolate chips
Crushed Oreos (about 8) – I like to take the filling out of mine for the topping

Directions:
Line an 8×8” square baking dish (you can also use a 9×9” baking dish) with parchment paper.
In a food processor (or zippered bag), crush Oreos until fine crumbs.
Combine the melted butter and Oreo crumbs together in a small bowl.
Press the crumbs mixture down into the bottom of the square pan.
Put the crust into the freezer for 10 minutes or while you are making the cheesecake layer.
In a medium sized mixing bowl, combine the cream cheese and powdered sugar together with a hand mixer on low (you can also use a stand mixer).
Add the sour cream and vanilla and mix on low until smooth.
Use a zippered bag to roughly crush the Oreos (you can leave big pieces or use small crumbs – it’s really a personal choice how chunky you want your Oreos).
Pour the crushed Oreos into the cheesecake batter and fold once (do not over mix).
Pour the batter into the prepared crust gently folding in the Oreos as you press the cheesecake on top of the crust and smooth the top.
Allow the cheesecake to set completely in the refrigerator (4-6 hours) or in the freezer (2-4 hours) or overnight in the freezer or refrigerator. I used the freezer and froze mine overnight.

If frozen: remove from the freezer and let it sit at room temperature for 10 minutes before cutting into 16 squares (4 rows of 4) and adding the topping.
If refrigerated: remove from the refrigerator and immediately cut the cheesecake into 16 squares (4 rows of 4) and add the topping.

For the topping:

● For the topping, you can leave the Oreo filling if you prefer, I just like the look of crushed Oreos without the filling.
● I used regular Oreos for this recipe, but you could always use double stuffed.
● Serve immediately after the topping is added or refrigerate until ready to serve because the cheesecake will get soft at room temperature.
