- Strawberry Box Cake Mix! (I used Betty Crocker Super Moist Strawberry Cake Mix)
- Butter, Eggs, Lemon Juice, and Powdered Sugar!
- A Baking Sheet and Parchment Paper!
How to make Easy Strawberry Crinkle Cookies Recipe!
The BEST Strawberry Crinkle Cookies! Great for Summer Parties, Baby Showers, or Valentine’s Day! So fun and DELICIOUS!
First, preheat your oven to 350 degrees and line a baking sheet parchment paper. Add the cake mix to a mixing bowl.
Next, add in the eggs, melted butter, and lemon juice. Mix the ingredients together.
Now mix the ingredients all together until the cookie dough coming together.
Use a cookie scoop to make cookie dough balls. Roll each cookie dough ball in powdered sugar, completely coating them.
Next, place the sugar-coated cookie dough balls on the prepared baking pan. Space them out evenly. Bake in the oven for 11 minutes.
Once the cookies are finished baking, let them completely on the baking sheet.
Finally, serve the cookies or store them in an airtight container. They store best at room temperature for 3-4 days. Enjoy!
Easy Strawberry Crinkle Cookies Recipe
Yields: 13 Cookies
Preparation time: 7 minutes
Baking time: 11 minutes
Additional time: 10 minutes
Ingredients:
1 box of strawberry cake mix (15.25 ounces)
6 tablespoons unsalted butter, melted
2 eggs
2 tablespoons lemon juice
1/2 cup powdered sugar
Directions:
Line a baking sheet with parchment paper and preheat the oven to 350 degrees.
Combine the cake mix, butter, eggs, and lemon juice together in a medium sized mixing bowl and mix well.
Use a two tablespoon cookie scoop to create cookie dough balls the same size (you can use a 1 tablespoon cookie scoop to yield more cookies, but you may need to decrease the baking time by 1-2 minutes).
Roll the cookie dough balls in the powdered sugar so they are completely coated and place them about 11/2” apart on the baking sheet.
Bake for 11 minutes at 350 degrees.
Remove from the oven and let cool completely on the baking sheet.
Store in an airtight container at room temperature for 3-4 days.
Notes:
● Option to sprinkle a little powdered sugar on top of each cookie before baking.
● Do not sprinkle powdered sugar after baking or the cookies won’t have a “crinkle” effect.
● If you don’t have lemon juice, add two more tablespoons of butter instead of lemon juice.
● I used Betty Crocker Super Moist Strawberry Cake Mix, 15.25 oz.

Do crinkle cookies from cake mix need to be refrigerated?
These cookies do no need to be refrigerated! The dough is the perfect consistency when making them from a cake mix. You can roll them and immediately put them on a baking sheet to bake without having to refrigerate. If your dough is sticky, you can refrigerate them for 30 – 1 hour, but it’s not necessary.
Are crinkle cookies supposed to be soft?
These Strawberry Crinkle Cookies SUPER soft and chewy on the inside with a crinkly outer shell! When you roll the cookie dough balls in powdered sugar before baking, the powdered sugar dries out in the oven. This creates a cracked, hard outer shell while leaving the inside soft and chewy! SO fun and delicious!
How do you know when crinkles are done?
Strawberry Crinkle Cookies are done when the outside texture has cracked and crinkled! You can also feel the outside of the cookie to check if the powdered sugar has “set”. Remember, outside texture will harden more as the cookies cool. Just be careful because the cookies will be VERY HOT coming out of the oven!
