Fresh Chewy Lemon Cookies
Use Fresh Lemons and Lemon Zest for the best results, but you can also use lemon juice if that is what you have!
I’ve never had a bad batch of these cookies, SO easy to make!
What you need for Lemon Cookies from Scratch
- For best results, use fresh lemon juice and lemon zest!
- Powdered sugar and vanilla for the glaze – don’t skip this part!
- Basic pantry ingredients
- If you don’t have fresh lemons on hand, you can always use lemon juice concentrate!
- Mixing Bowl
- Cookie Scoop
- Baking Sheet
- Parchment Paper
- Cooling Rack

How do you make Lemon Cookies from Scratch?
Preheat the oven to 350 degrees and line a baking sheet with parchment paper. IN SHORT: Add all of your wet ingredients together and then add in the dry ones!
Cream the butter and sugar together until mixed well!
Add the egg, vanilla, lemon juice, and lemon zest and mix well.
Stir in the flour, baking powder, salt, and baking soda.
Mix until a soft dough forms.
Use a 1 tablespoon cookie scoop to create cookie dough balls.
Arrange the cookie dough balls on the prepared baking sheet and bake for 7 minutes.
Do not over bake the cookies. Remove them from the oven as soon as the edges start to brown, or catch them before they brown.
Let the cookies cool on the baking sheet for at least 10 minutes.
While they cool, make the glaze by combining the powdered sugar and lemon juice and mix until smooth. Add a few drops of vanilla and stir until smooth.
Drizzle the glaze over the cookies with a fork.
Lemon Sugar Cookie Recipe
Yields: 31 Cookies
Preparation time: 10 minutes
Baking time: 7 minutes
Additional time: 10 minutes
Ingredients:
1/2 cup unsalted butter (1 stick), softened
1 cup of granulated sugar
1 large egg
1 teaspoon vanilla
1 teaspoons lemon juice
1 teaspoon lemon zest
1 1/2 cups of unbleached flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
Lemon Glaze Ingredients:
1 cup powdered sugar
5 teaspoons lemon juice
Drops of vanilla (optional)
Directions:
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
In a mixing bowl, cream the butter and sugar together until combined.
Add the egg, vanilla, lemon juice, and lemon zest.
Stir in the flour, baking powder, salt, and baking soda.
Use a 1 tablespoon cookie scoop to create cookie dough balls and place them about 1.5″ apart on the prepared baking sheet.
Bake for 7 minutes.
Remove from the oven and let cool on the baking sheet for 10 minutes before transferring to a cooling rack.
While the cookies cool, make the glaze by combining the lemon juice to the powdered sugar and add a couple drops of vanilla.
Mix well until smooth. Add a little extra lemon juice or water until you get your desired consistency.
Drizzle the glaze over the cookies and let cool completely.
- Cookies can be stored in an airtight container for up to 1 week at room temperature.
- Freeze cookie dough balls for up to 3 months and add 2 minutes to the baking time if they are baked from frozen.

Can I freeze Lemon Cookies?
Yes!! I love making cookies because they are so easy to freeze! You can even freeze the cookie dough in 1″ balls so that when you are ready for them all you have to do is pre-heat the oven and bake!
